Thanks all for your suggestions.   Quick question - then progress below:

I've now switched off all but one Access Point.   Still the problem
persists.   In the settings of said access point, I've given it a static
IP and set it to have gateway and DNS of the Fibre router (the one with
DHCP switched off).   In said AP settings, it suggests that the choice
of gateway is optional.   Am I right in saying it therefore shouldn't
matter which router I set as the AP's gateway?   I'm pretty sure I've
tested the AP with the BT router as its gateway and that's made no
difference but would be interested to know if this is a red herring or
could be an issue.

Now - progress...

Do you know, on Saturday night, I was sure I'd fixed this.   I noticed
that the Fibre (non-BT) router had its UPnP broadcast on so I disabled
it and wifi was fine for 20 minutes.   I went to bed happy.

By Sunday, it was bad again.   I therefore went to the BT router and did
the same thing: disabling UPnP.   Still the problem persists.

Someone (I forget who, sorry) suggested I disable DHCP on the BT
router.   I did this and the BT Vision (now EE vision) refused to come
up.   I dunno why this should be - it had an IP address but there's no
doubt that the DHCP server has to be enabled on the BT router before the
EE box will let me watch the TV.

The only progress I've been able to make since I last posted has been to
notice that

a) the wifi seems better late at night and early in the morning

b) It's not necessarily the BT router that's the issue. I powered down
the fibre router yesterday for a bit and wifi was fine then.

It does seem to be the two routers "fighting" but, as I say, the curious
thing is this doesn't affect any cabled devices - they've all been solid
all the time.   It's only devices connected to WiFI access points that
get booted off once ever couple of minutes when both routers are on.
